ASSAMESE STYLE DUCK CURRY WITH FRAGRANT JOHA RICE

Joha rice is a premium variety of rice that is native to Assam, India. It is known for its sweet aroma and delicate flavor, making it a perfect complement to rich and flavorful meats like duck. In this recipe for Joha Rice with Duck, the Joha rice is cooked together with the duck curry. The soaked joha rice is added directly to the curry in the pan and cooked along with the duck and other ingredients until it is fully cooked and fluffy. This method of cooking the rice together with the curry allows the rice to absorb the flavors of the duck and spices, resulting in a flavorful and delicious dish.
INGREDIENTS
  • 1 cup Karbi Joha Rice. ADD TO CART
  • 2 duck legs
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder. ADD TO CART
  • 1/2 teaspoon red chili powder
  • 1 Karbi Bay leaf. ADD TO CART
  • 2-3 green cardamom pods
  • 2-3 cloves
  • Salt, to taste
  • 2 tablespoons oil
  • 2 cups water
DIRECTION:
Rinse the Joha rice in water and soak it for at least 30 minutes.
Heat the oil in a large, heavy-bottomed pan over medium-high heat. Add the duck legs and brown them on all sides. Remove the duck legs from the pan and set them aside.
In the same pan, add the chopped onions and fry until they are golden brown.
Add the ginger and garlic paste, and fry for a minute until fragrant.
Add the chopped tomato and fry until it turns soft and mushy.
Add the cumin powder, coriander powder, turmeric powder, red chili powder, bay leaf, green cardamom pods, and cloves. Fry the spices for a minute or two until fragrant.
Add the duck legs back to the pan and stir well to coat them in the spice mixture.
Pour in the water and bring the mixture to a boil.
Reduce the heat to low and cover the pan. Simmer for about 30-40 minutes or until the duck legs are tender and cooked through.
Add the soaked Joha rice to the pan, stir well, and cover the pan again.
Cook the rice over low heat for about 15-20 minutes or until it is fully cooked and fluffy.
Once the rice is cooked, turn off the heat and let it sit for 5-10 minutes before fluffing it with a fork.
Serve the Joha rice with the duck legs on top and garnish with fresh coriander leaves.
